Assam Hatidubi Smokey Fu Soonga

The tea makers at the Hatidubi Tea Factory in the Golaghat District surprise us: this is probably the first smoked tea produced in Assam! Fu Soonga is a very popular Assamese way of cooking, where young, green bamboo tubes are filled with food or yoghurt and cooked over an open fire or on hot plates. Fu means blowing and Soonga means tube. The idea was to blow smoke from wild woods into the leaves through these bamboo tubes during production. The result is delicious: a soft, aromatic Assam tea with a light, balanced smoky note.
