The Ulmo tree grows exclusively in the temperate rainforest of Chile. When the evergreen Ulmo trees bloom white at the beginning of the year and give off their intoxicating scent, the bees collect the nectar.

The harvest of the dark yellow, delicately creamy, spicy honey takes place in March; its characteristic aroma is slightly reminiscent of anise.
