China Matcha Taishan
This Chinese matcha comes from the Taishan Tea Plantation, located in the northwestern part of Zhejiang Province. In comparison to Japanese productions, this optically light reed-green, finely powdered version has a robust character after foaming, with full volume and the original tartness typical of green tea. The bowl with moss-green tones has a strong, fresh bouquet, with a slight bitter aftertaste.
Because of its rather strong taste, this matcha is also ideal for cooking and baking or as a matcha latte.
ICED TEA RECIPE
Ingredients: 1 bamboo spoon of matcha powder / 150ml mineral water / 2-3 teaspoons of agave syrup / 1/2 lime / 2 sprigs of fresh mint / ice cubes or crushed ice
Preparation: Bring some water to the boil and allow to cool to approx. 80°C. Put 1 bamboo spoon of matcha powder in the bowl and add some hot water (approx. 80°C). Mix a thick tea paste with the bamboo whisk and set aside to cool. Cut the lime into wedges and put it in a glass with the ice cubes. Add the tea paste, top up with mineral water and add agave syrup to taste. Serve with a straw and stirrer.
